Crockpot Meatloaf & Potato Wedges

 
Ingredients:
1 lb ground beef
1 cup dried bread crumbs
1 egg
1/2 cup milk
1 tsp dried parsley
1/2 cup each finely diced carrots, celery & green peppers (optional) - minced even if you really need to hide them from picky eaters.
 
Directions:
Line your crockpot with greased aluminum foil. Toss raw potato wedges seasoned as you like onto the foil. Combine meatloaf ingredients (above) well, and place into a loaf pan. Top the meatloaf with strips of raw bacon and set on top of potatoes. Cover and cook for 6-8 hours on low or 4-6 on high.
